Aims and Scope
The aim of this Symposium is to constitute a forum concerning the macromolecules and secondary metabolites of grape and wine (i.e. polyphenolic compounds, proteins and glycoproteins, ...) in relation to the physiology of grape ripening, defence mechanisms of grapevine against phytopathogenic micro-organisms, on one hand, and, on the other hand, in relation to physico-chemical phenomena in wines (colour, co-pigmentation, haze, wine stabilization, foam and physics of bubbles in champagnes and sparkling...).
